The Aldo Viola winery is a family-run production reality located in Alcamo. Here, in the province of Trapani, one of the most suitable wine-growing areas in Sicily, the Viola family has been carrying on knowledge and traditions for four generations. Today it is Aldo who leads the reins of the company, a young man who grew up in the world of wine. At the age of twenty he decided to leave Sicily, to gain experience in various European countries. Then, after the last stop in Denmark, he returned to the family cellar, having clear ideas on which vineyards to buy and which wines to start producing. In fact, Aldo is a "one man show", which takes care of every phase of the process, from the planting of the vines to the sale, always having as reference three fundamental cornerstones, excellence, tradition and eco-sustainability. The Aldo Viola winery is in fact characterized by a very naturalistic approach, which aims to create a range of labels in which, every sip, is able to tell the beauty of the Trapani terroir.

 

The vineyards owned by the Aldo Viola winery extend over an area of ​​about 16 hectares, included in the fertile province of Trapani, in the area indicated by the name of Feudo Guarini. Among the rows, the typical vines of the area are grown, such as Nero d'Avola, Syrah, Grillo, Catarratto, Nerello Macalese and Perricone. Each variety is bred following the principles of eco-sustainability, and the processes observe organic farming criteria, to obtain rich and full of aromas grapes. In the cellar, fermentation takes place thanks to the presence of indigenous yeasts, and malolactic fermentation takes place naturally, ensuring better microbiological stability. The sulphites are practically reduced to zero, and, at the time of bottling, no filtration is carried out, thus keeping intact all the naturalness of each individual type.

 

Aldo Viola gives rise every year to a small niche production, which amounts to just over 10,000 bottles, divided into seven labels between whites and reds. Wines born of his fiery, charismatic and overwhelming soul, which absorb the energy of the earth, transforming it into aromas and flavors with unique characters.
