Typical expression of Chablis with purity, tension, grapefruits and mineral aromas, nice liveliness and a fresh round finish.
Notes of pears, apples, and marine air. Balanced wine with harmonious vivacity.
Vinification 100% stainless steel tanks. Alcoholic fermentation under controlled temperature (18°c). Malolactic fermentation.
Ageing 5 to 12 months in stainless steel tanks.
Their objective is to lengthen the time the vineyards are kept alive and to increase the sustainability of the soils. They have acquired tools that are specifically designed to manage soils and therefore stop the use of harmful chemicals. They use organic fertilizers when needed.
They tend to the vineyards very carefully to prevent common diseases. They use a horse and plow in some of the vineyards to till the soil which allows for a better aeration. To keep them alive they also try curettage on vines that have been contaminated by black rot, an incurable disease found in wood.
They think that the genetic diversity of the vineyards is very important. Each vine is unique and has its own DNA. They can therefore select some of the best vines from that vineyard, cut off some of the canes in the winter and deliver them to the nursery where they will be grafted and later used for new planting.
