Petit Chablis expresses citrus and floral notes reminiscent of hawthorn and vine flower. Pronounced liveliness in the mouth, with a chalky and saline finish.
Vinification No added yeast, long fermentation using indigenous yeasts, in temperature-controlled vats. Spontaneous malolactic fermentation. Matured for 6 to 10 months. In stainless steel tanks, with the least possible handling. Long moderately cold stabilisation. Fining using bentonite if necessary. The wine is gently filtered once before bottling.
The Domaine has one guiding principle: in a terroir as rich and unique as Chablis, the wines are made in thevineyard. At every stage, human intervention is kept to the strictest minimum, so that nature can express itself fully.
As a pioneer and now a leader on the subject, Louis Michel & Fils made the bold decision to vinify its winesonly in stainless steel tanks: this neutral material does not have any effect on the natural qualities of thechardonnay grapes. This approach is certainly apparent in the Louis Michel & Fils style: our Chablis wines exude finesse, purity andfreshness.
