Variety White Grapes

Alcohol 11%

Size 750ml

Serving temperature 8/10°C

Type Sparkling white pétillant naturel

Pairing ideal as an aperitif, fresh cheeses, nibbles, salumi, fried fish, quiches

A slightly sparkling, natural, unfiltered white wine. The second fermentation takes place once a year around Easter.

Pale yellow with greenish hues. The aroma recalls toasted bread crust with delicate notes of apple and citrus. On the palate, the wine is dry, complex and pleasant with its typical notes of yeast and fruit. Lightly salty and very mineral on the finish. Can be served clear by leaving the lees deposited or slightly opaque, with a slight shake of the bottle for a more rustic, decisive flavour.

Vinification Spontaneous refermentation in the bottle

Production philosophy Artisanal, Indigenous yeasts

The Zanotto winery is part of a niche of winemakers closely linked to the traditions of the area who have chosen to produce Prosecco with refermentation in autoclave or bottle, according to the ancient practice before the introduction of technology. The Zanotto family has been making wine for 25 years, but it was with Riccardo that in 2009 they started marketing it.

Zanotto owns 7 hectares of vineyards in the heart of the Conegliano Valdobbiadene DOCG. Riccardo has his idea of what characteristics a wine should reveal when it is tasted. For him, wine must be able to tell the history and tradition of the territory and the life experiences of the producer himself. To achieve this, Riccardo studied extensively to find the right combination of grapes, soil, technique and time until he became "a tailor who selects quality, taste and tradition".

His Prosecco perfectly reflect Riccardo's idea of wine: they are wines with a strong personality and a strong bond with the territory, wines capable of giving you a different emotion every year and bringing you back to live as it once was, with simplicity and conviviality.
